From our open kitchen to your plate, every dish at Xalisco is crafted with ingredients sourced fresh each day — handmade tortillas, vibrant ceviches, and recipes that honor the soul of Mexico.
Xalisco — a coastal town in Sinaloa, Mexico, where the sea meets the desert — is where our culinary roots run deep. When our family moved to the High Desert of Oregon, we brought those same fire-kissed recipes, the same stone molcajetes, and the same belief that a meal should feel like coming home.
Every morning, our kitchen team arrives before dawn to hand-press tortillas, chop herbs, and prepare the day's ceviches from fish delivered fresh to the valley. We don't cut corners because the flavors of Mexico demand nothing less.
Three generations of Mexican cooking, preserved and passed down.
Ingredients sourced locally whenever possible, imported when it matters.
Proud to serve Redmond and the surrounding High Desert communities.
Our ceviche bar is the heartbeat of Xalisco. Every day, our chefs prepare a fresh batch using the morning's catch — from classic lime-cured shrimp to our bold tomato ceviche, each bowl is a celebration of coastal Mexico served right here in Redmond.
